Sweet Potato Tart
A favorite Thanksgiving side dish and a yummy comfort food recipe. Sweet Potato Tart topped off with Greek Yogurt.
Make the most of this healthly fall veggie with Pellas Nature Garlic and Oregano olive oils.

- 1 sweet potato
- 1/2 tsp Pellas Nature Garlic olive oil
- a few drops of Pellas Nature Oregano olive oil (optional)
- 30 gr (1 oz) butter at room temperature
- pinch of salt
- pinch of pepper
- 2 Tbsps Greek yogurt
- 1 Tbsp pistachios
- a handful mixed greens
- a bit of lime juice
Peel the sweet potato thinly.
Put the peeled sweet potato in a bowl and add butter, Pellas Nature Garlic olive oil, salt and pepper. Toss to coat.
Transfer to a baking pan and press down well, not leaving any gaps.
Bake for 30 to 35 minutes in a preheated oven at 160°C (320°F).
Spoon over a good dollop of Greek yogurt with a few drops of Pellas Nature Oregano olive oil and serve with mixed greens.
Top it off with a squeeze of lime juice and some crushed pistachios.
